Alright folks, this is one food we both adore, the formidable eggplant!  Much more popular in Asian cooking then it is in the US of A, or Canada, the eggplant is a lot more versatile than you may realize.  Don't confine it to eggplant parmigiana alone.  That would be like only using apples to make apple pie!

    Absolutely John 1! As many know , I've always been a fan of the classic breaded then fried in shallow pan with EVOO. But John 1 claims he can roast eggplant that will make me forget about frying! Please do post your favorite recipe!
